The wine remains on the lees for a month and goes through a partial malolactic conversion
however studies in the mid 60’s uncovered the fact that it is a Barbera and Chatus (Nebbiolo di Donero) crossing
the must is cold macerated at 4⁰C for 12 hours before being fermented separately
with a large proportion of sand on limestone
